Fresh and frozen food are preserved by this process and the advantage of this process of food preservation is that the amount of nutrients in the food (amount of carbohydrates, proteins, minerals and vitamins) remain unaltered. however it is necessary to commercially sterilize these food before they are made available in the market for consumption. A retort is an autoclave or a sterilizer that is used to sterilize foods that have been packed and place in a contained and sealed air tight.
