Question
Chapter 23, Problem 16QAP
Interpretation Introduction
Interpretation:
The chemical equation for the reaction of maltose and water to produce glucose needs to be determined.
Concept introduction:
Maltose is a type of sugar having the molecular formula C12 H22 O11 . It is also known as maltobiose or malt sugar.
It is a dissaccharide which consists of 2 units of glucose joined via glycosidic linkage. Thus, glucose is a monosaccharide here.
On reaction with water, the glycosidic bond between the two monomer breaks down and produces glucose.
